Sunday 3/22 Cooking at Home with Tony

Roasted Potatoes

fingerlings or redskins quartered

6-8 cloves of garlic

1/2 white onion, large dice

1/4 c Olive oil

1 tsp dry herbs (thyme, rosemary, basil, marjoram)

salt and pepper

preheat oven to 350 F. Wash and quarter potatoes and place in baking pan. Add garlic, onion, your favorite herbs, salt and pepper. Drizzle with olive oil and toss to coat all ingredients well. Place in preheated over for 40-45 minutes. 

Garlicy Asparagus

1# asparagus, trimmed 

10 cloves of garlic sliced thin

3/4 T Butter

Salt and Pepper

Bring a pot of water generously salted to a boil. Place trimmed asparagus in pot for roughly 1-2 minutes depending on how thick your asparagus is. Have a bowl ready of ice and water to shock, this will stop the cooking process and bright color of the asparagus. Remove and place in ice bath. In a medium saute pan, melt butter and lightly toast garlic in the pan. Add asparagus, season and serve.

Steak with Parmesan Cream

We used tenderloin but your choice of beef will work

2 6oz filets

steak seasoning

salt and pepper

olive oil

Generously season streaks with your favorite steak seasoning, salt and pepper. Preheat over to 425 F. Place cast iron skillet and heat on high. add Oil to pan and sear steaks roughly 3 minutes and turn over. Place in over for 7-8 minutes for medium rare. 

Parmesan Cream

1 C heavy cream

2 T. Butter

1/4 C grated parmesan

salt and pepper

In a hot pan, add heavy cream and butter cook until better is melted and cream is bubbling. Add parmesan cheese, salt and pepper whisk and serve.
