Saturday 3/21 Recipe
Tomato-chèvre salad
2/3 Roma tomatoes
Few leaves of basil
2oz chèvre crumbles
Salt and pepper
2 T balsamic vinegar
2T olive oil
Angel Hair Pasta
2 boneless skinless chicken breast julienne
1/4 c sun dried tomatoes
2 ea portobello mushrooms, or whatever mushrooms you like
4-5 cloves of garlic sliced
1/2 small red onion julienned
2-3 basil leaves chiffonade
1/4c extra virgin olive oil
1# angel hair pasta
1/2 c parmesan cheese
On medium heat, add olive oil to pan and julienne chicken breast. Cook until chicken is cooked thru. Add onions, portobellos, sundries tomatoes and sauté. And garlic and sauté until golden brown. Reduce heat to low. Cook pasta in boiling salted water til al dente . Add pasta to pan and basil. Toss and serve with Parmesan cheese.
